Beyond Coco ‘NUTS’ for Hot Chocolate

Brace yourself hot chocolate lovers, I am about to take you to a place you thought may never exist. A place where it’s ok to eat chocolate and not feel bad about it. A place where eating chocolate is good for you.
Nope! Your not dreaming, but if this makes you feel warm and fuzzy then let me put this drink in your hand and you’ll never want to wake up.

Introducing my newest creation – Beyond Coco ‘Nuts” for Hot Chocolate
My dairy and refined sugar free alternative to Hot Chocolate.

If you are anything like me and love nothing more then sipping on a nice warm hot chocolate during the colder months, then I’ve got you girl (or boy). I tend to make this my before bed treat to help me wind down but since cleaning up my diet I have found that as good as the standard hot chocolate tastes, it tends to have the adverse effect and because of the sugar intake it sends my energy and insulin levels crazy and it actually results in me having a terrible night sleep and I had to face facts, a very dreaded fact actually, that I may have to give up my beloved hot chocolate.
Saying up the pro’s and con’s of this made me realise just how much this one drink at the end of the night was incredibly bad for me as I was basically loading up my body with the things I generally wouldn’t eat during the day, right before bed, which is a big no no!
But it just tastes so damn yummy (insert sad face here)

So one freezing night during “that time of the month” while my mind was screaming “GIMME CHOCOLATE, GIMME WARMTH”, I decided it was time to play magic potions like I did when I was a kid and pull out everything that looked appealing in the “superfoods” section of my pantry, pour it into a saucepan and mix it together and low and behold, I am a genius!

1 25oml can of Beyond Coconut Water ( My favourite is Beyond Coconut Water because it is 100% natural and fat free, with no additives or nasties)
1 cup of Coconut Milk (Can be substituted with Coconut Cream for a thicker and more filling drink)
1 tablespoon of Raw Cacao
1 teaspoon of Natural Vanilla Essence
1 teaspoon of Organic Maple Syrup
6 squares of Sugar Free Dark Chocolate (I use Well Naturally’s No Sugar Dark Chocolate)

Pop all ingridants into a saucepan and stir on low heat until dark chocolate is melted.
Pour into a mug (or Mason Jar ’cause they look cooler) and serve.
*If you want to be a little bit naughty you can add marshmallows to the finishing product but stick to a maximum of 2 as they do contain sugar!
I also sprinkle with coconut flakes just ’cause it looks pretty.

The benefits of Coconut Water

In case you weren’t already getting fomo over the benefits of coconut water and busting at the seams to start whipping one up here’s another gift from me to you.. If you double the ingredients and pour them into heat proof glass bottles and pop them in the fridge, you now have a healthy chocolate milk alternative  as well. Your welcome!

Thank you to Beyond Coconut Water for generously donating product for The Next Step SCI Recovery Centre’s cocktail fundraiser.
